Di Pacci — Commercial Espresso Machines — USA

Sanremo Opera — Flagship Espresso Machine

The Sanremo Opera is the brand's flagship — developed with input from the Opera Team, a group of leading baristas and coffee technicians, and built for baristas who want total command over every stage of extraction. At its center is the exclusive CDS (Controlled Delivery System), giving full control over three distinct, fully programmable infusion phases so you can dial in a genuinely tailored extraction for any coffee.

Temperature is regulated independently for both the groups and the boilers, and each group runs its own dedicated Pressure Drive mechanical pump — genuinely rare engineering that gives every group true independence rather than shared infrastructure. The Opera ships with an ASUS tablet for Bluetooth configuration, putting deep machine control in your hands beyond a standard built-in display, and comes fitted with competition filters as standard. As Sanremo puts it, the only way to fully appreciate what the Opera does is to run your own beans through it.

Why the Sanremo Opera

  • Total extraction control — CDS gives full programmable control over three distinct infusion stages per shot.
  • Independent thermal control — temperature is regulated separately for groups and for boilers, not as one combined system.
  • True per-group independence — a dedicated Pressure Drive mechanical pump for every group, not shared pumping infrastructure.
  • Tablet-based configuration — an ASUS tablet with Bluetooth gives deep control beyond a standard display.
  • Competition-ready as standard — fitted with competition filters from the factory.
  • Built by coffee people — developed with input from the Opera Team of leading baristas and technicians.

About This Machine

What does the CDS system actually let me control?
CDS gives you full programmable control over three distinct stages of infusion within a single shot. Rather than accepting one fixed extraction profile, you can tailor how the coffee is wetted, built up, and extracted, tuning the machine specifically to the coffee you're running.
Why does independent temperature regulation for groups AND boilers matter?
Most machines regulate temperature as a single combined system. The Opera separates boiler and group temperature control, giving finer-grained management of exactly where heat is applied and held — a genuinely more precise approach to thermal stability.
How does the Opera compare to the Sanremo Zoe Competition?
The Zoe leads with monocoque construction and accessible pricing for its class. The Opera is Sanremo's flagship, adding the CDS three-stage extraction system, independent group-and-boiler temperature control, a dedicated pump per group, and tablet-based configuration. Talk to our team about which fits your ambitions and budget.
Is finance available on the Sanremo Opera?
Yes — flexible finance is available on commercial machines like the Opera. See our finance options or contact our team to discuss a plan that suits your business.

How long is the warranty on a coffee machine?

All Di Pacci products include a warranty on non-consumable parts. New machines carry 12–24 months, and used or pre-owned machines carry 3 months. Our skilled technicians are available for after-sales support throughout your warranty and beyond.

What is the shipping policy?

We ship US-wide via air freight, with a tracking number provided on every order. Shipping is calculated at checkout. If you'd like a delivery estimate before you buy, contact our team on +1 (646) 774-0590 or see our shipping policy.

Do I have to pay tariffs or customs duties?

No. All tariffs and customs duties are included in the price and covered by Di Pacci Coffee Company. There are no extra steps for you and no surprise fees on delivery — the price you see is the price you pay.

Are used machines tested before sale?

Yes. Every pre-owned, ex-demo, and ex-training-room machine is inspected and fully serviced by our qualified technicians before it ships — many go through a detailed multi-point safety check. They're cleaned, tested, and ready to work on arrival, so you get proven performance at a fraction of new-machine cost.
