The shape of the spout, the angle of the handle, the capacity — every detail affects how milk moves when you're steaming, how your microfoam rolls into the cup, and whether your latte art lands where you intend it to. Choosing the right milk jug

  • Capacity — size to your drink — The most important decision. A milk jug that's too large gives you too much dead space above the milk — your steam wand can't create a proper vortex and the foam comes out uneven. A jug that's too small overflows before you've stretched the milk enough.

    General guide:
    • 8–10 oz (250–300ml) — One cappuccino or flat white. The most versatile size for single drinks.
    • 12 oz (350ml) — One latte or two smaller milk drinks back to back.
    • 20 oz (600ml) — Two lattes simultaneously, or high-volume café service.
  • Spout shape — round vs pointed — Round spout milk jugs produce a wider, softer stream — easier to control for beginners and better for cappuccino-style thick foam. Pointed or needle-tip spouts give you a narrower, more precise stream ideal for latte art and flat whites where placement matters.
  • Handle design — A comfortable, well-angled handle lets you grip confidently while monitoring the jug temperature against your palm. A handle that forces an awkward wrist angle makes consistent steaming harder. Most quality barista milk jugs use a wide, full-grip handle.
  • Stainless steel gauge — Thicker stainless steel retains heat better and gives more tactile temperature feedback. Thinner gauge jugs are lighter and slightly easier to manoeuvre for latte art pours.
  • Spout angle — Some milk pitchers have angled spouts that direct the pour slightly downward — useful for latte art where you want to bring the jug close to the surface without raising the cup.

Milk jug by drink type

  • Flat white — 8–10 oz pointed spout jug. A flat white needs a tight, precise pour of velvety microfoam with minimal surface disruption. The pointed spout gives you the control to create clean patterns even in a 5–6 oz cup.
  • Latte — 12 oz jug, pointed or round spout. Lattes use more milk so a slightly larger jug is needed. A pointed spout helps if you want to do latte art in the larger cup format.
  • Cappuccino — 8–10 oz round spout jug. Cappuccino foam is drier and stiffer than a flat white. A round spout jug makes it easier to pour the thick layer of foam cleanly onto the espresso.
  • Multiple drinks at once — 20 oz jug. Enough capacity to steam for two drinks simultaneously without the milk volume being too low for a good vortex.

Steaming tips — getting more from your milk jug

  • Start with cold milk — straight from the fridge. Cold milk gives you more time to stretch and texture before it overheats.
  • Fill the jug to just below the spout's base — roughly one-third to half full depending on jug size.
  • Position the steam wand just below the milk surface and off-centre — you want to create a rolling vortex, not just blast air into the centre.
  • Stretch first (lower the jug to introduce air), then texture (submerge the wand to roll the foam into the milk).
  • Stop steaming at around 140°F (60°C) — hot enough to taste right, cool enough not to scald the milk proteins and lose sweetness.
  • Tap the jug on the counter and swirl before pouring to eliminate any large bubbles.
