The La Marzocco GS3 is the benchmark home espresso machine — the point at which home brewing stops being a compromise and becomes genuinely equivalent to the best café espresso in the world. Since its introduction in 2007, the La Marzocco GS3 has set the standard for what advanced La Marzocco technology looks like when engineered specifically for home use.

Built by hand in Florence, Italy, the GS3 brings the complete thermal stability system from the La Marzocco Strada — La Marzocco's professional commercial machine — into your kitchen. A preheating system, digital PID controller, saturated groups, dual boiler system, and digital display combine to create what La Marzocco themselves describe as a luxury espresso preparation platform. All that's left for you to do is grind, dose, and tamp.

Two versions — MP and AV

The La Marzocco GS3 is available in two versions, identical in build quality and core engineering — differentiated only by how you control water flow during extraction:

  • GS3 MP — Manual Paddle — A conical valve connected directly to the group head gives you real-time, hands-on control over flow rate throughout every shot. The paddle lets you shape the entire pressure curve — from a soft 2-bar pre-infusion through peak pressure and into a gradual decline — while a periscope pressure gauge shows you exactly what's happening. This is the machine for the espresso obsessive who wants to treat every origin and every roast as a unique extraction challenge.
  • GS3 AV — Auto-Volumetric — Pre-programmed volumetric dosing delivers precise, repeatable shots at the touch of a button. Perfect for households that want La Marzocco GS3 performance with a faster, more consistent daily workflow. The AV still delivers the same dual boiler thermal stability and saturated group precision — it simply automates the dose.

The thermal stability system — what it means in practice

Temperature consistency is everything in espresso. A 1°C variation in brew temperature can measurably change the taste of a shot. The La Marzocco GS3's thermal stability system addresses this at every point in the water path — from tank to cup.

  • Preheating system — Before water enters the coffee boiler, the GS3's preheating system brings it to near boiler temperature. This eliminates the temperature shock of cold tank water entering a hot boiler, increases brewing productivity, and ensures the coffee boiler holds its set temperature with exceptional stability from the first shot to the last.
  • Dual boiler — The GS3 uses two fully separate stainless steel boilers — one dedicated to brewing espresso, one to producing steam. The brew boiler is insulated to reduce energy consumption and maximise temperature stability. The steam boiler runs at full steam pressure independently, so you can brew and steam simultaneously with no temperature crossover, no waiting, and no compromise on either.
  • Saturated groups — La Marzocco's patented saturated group head design permanently connects the group to the brew boiler, surrounding it with boiler water at all times. The result is rock-solid thermal stability at the point of extraction — the group never loses heat between shots, even during extended back-to-back service. It is the most thermally stable group head design available in home espresso.
  • Digital PID controller — Independent dual PID temperature control on both the coffee and steam boilers. Set your brew temperature to 0.1°F precision and monitor it in real time on the digital display. Adjust for different roast profiles — lower for light roasts, higher for dark — and the GS3 holds your set point without drift.
  • Synthetic ruby flow restrictors — Precision-engineered ruby restrictors in the water path resist scale formation and erosion over years of daily use, maintaining consistent flow rate and extending the machine's service life.
