Di Pacci — Dual-Boiler Saturated-Group Paddle Espresso Machine

La Marzocco GS3 MP Custom Build

This La Marzocco GS3 MP is a brand-new custom build from a cancelled order, so you get a made-to-spec GS3 without the factory wait.

The La Marzocco GS3 MP puts La Marzocco's commercial architecture into a single-group machine: a 1.5 litre coffee boiler and 3.5 litre steam boiler, each under digital PID control, feeding a saturated group that holds brew temperature right at the coffee. The mechanical paddle works a conical valve so you can ease into extraction and change pressure during the shot, with a periscope gauge showing what's happening.

Custom GS3s are normally built to order. This one was specified for a customer whose order was cancelled, so it's brand new, unused and has been checked by our technicians, and it can go home now. If you want the GS3's stability with automatic volumetric dosing instead of hand control, the GS3 AV is the version to ask about.

Key Features of the La Marzocco GS3 MP

🎚️ Mechanical paddle

A conical valve under the paddle lets you control pre-infusion and pressure by hand, shot by shot.

♨️ Saturated group

The group is part of the coffee boiler, so water hits the puck at the temperature you set.

🔥 Dual boilers, dual PID

Separate 1.5 L coffee and 3.5 L steam boilers, each digitally controlled, for back-to-back milk drinks.

🧭 Periscope gauge

Shows brew pressure in real time so you can see exactly what the paddle is doing.

⚡ Preheating & Half Power Mode

Incoming water is preheated for stability, and a reduced-power mode is available where supply is limited.

📱 La Marzocco Home App

Connect to the app to adjust temperatures and settings from your phone.

Why a Saturated Group and Paddle Change the Shot

Most home machines heat a group that sits outside the boiler, so temperature drifts as it warms up and between shots. The GS3's group is part of the coffee boiler.

  • The PID holds the coffee boiler, and therefore the group, at your set temperature.
  • Lift the paddle partway for a gentle pre-infusion, watching the periscope gauge.
  • Open fully for extraction, then taper pressure toward the end of the shot if the coffee calls for it.

Stable temperature plus hand control of pressure is what lets you pull sweet light roasts and syrupy darker ones on the same machine.

GS3 MP vs GS3 AV

Same boilers and saturated group; the difference is how the shot is controlled.

Feature GS3 MP GS3 AV
Brew control Manual paddle, conical valve Automatic volumetric buttons
Pressure profiling Yes, by hand No
Repeatability Depends on the barista Programmed doses
Boilers 1.5 L + 3.5 L, dual PID 1.5 L + 3.5 L, dual PID
Best for Hands-on enthusiasts Offices and busy households

Di Pacci recommendation: Buy the MP if you want to shape every shot yourself. Don't bother if you just want consistent coffee at the push of a button — the GS3 AV or a simpler dual boiler will make you happier for less effort.

Grinders for the GS3 MP

A paddle machine shows up every grinder flaw, so pair it with something precise.

Grinder Burr Why it pairs well
Niche grinders Conical, single dose Near-zero retention for dialling in profiles
Eureka Mignon range Flat, stepless Quiet, precise and compact beside the GS3
Turin single-dose grinders 64 mm flat Low retention and burr upgrade options

La Marzocco GS3 MP Custom Build — Frequently Asked Questions

Is this La Marzocco GS3 MP brand new?

Yes. It is a brand-new custom build from a cancelled order. It has never been used and our technicians have tested it.

What does MP mean on the GS3?

MP stands for Mechanical Paddle. The paddle operates a conical valve so you control pre-infusion and pressure by hand.

What power does the GS3 MP need?

It runs on 220 to 240 volt single phase and draws 1620 to 2300 W, with a Half Power Mode for limited supplies. Call (02) 9758 0760 and we'll confirm it suits your power point.

Can the GS3 MP be plumbed in?

Yes. It can run from its built-in reservoir or be plumbed to mains water. We can advise on filtration and installation.

What is the difference between the GS3 MP and GS3 AV?

Both share the same dual boilers and saturated group. The MP has a manual paddle for pressure control; the AV has automatic volumetric dosing buttons.

Which grinder should I pair with the GS3 MP?

Choose a precise grinder with low retention, such as a Niche, Eureka Mignon or a 64 mm single-dose grinder, so you can dial in paddle profiles accurately.
