The Ditting 807 Lab Sweet is the only 807 model fitted with premium cast steel burrs and their distinctive grinding-teeth geometry. That single difference is the reason this model exists: the burr profile produces a tighter particle-size distribution, which translates directly into more even extraction and noticeably more sweetness in the cup.

With close to zero retention, it is built for two jobs specifically — cupping and quality-control work in a lab, and single-portion grinding on a coffee shop bench where every dose needs to be clean of the last. The grind range runs from Turkish fine all the way out to very coarse for cold brew, adjusted through the anodized aluminum wheel, and twin active cooling fans hold performance steady at lower operating temperatures during sustained sessions.

What makes the 807 Lab Sweet different from the other Ditting 807 models?
It is the only 807 fitted with premium cast steel burrs and their special grinding-teeth geometry. The other 807 variants use hardened or special steel burrs and are set up for different jobs — the FILTER model, for example, has an adjustable slide for filter baskets. The Lab Sweet is the sweetness and particle-consistency specialist.
Is this Ditting 807 Lab Sweet new or used?

Can the 807 Lab Sweet grind for espresso as well as filter?
Yes. The adjustment range runs from Turkish fine through to very coarse for cold brew, so it covers espresso, filter, and everything between on one set of burrs. In practice it is most often used for cupping and single-dose work rather than as a high-volume espresso bar grinder.
What does "near-zero retention" mean in practice?
Grounds left behind in the chute contaminate the next dose. The 807 Lab Sweet uses a bag clamping lever and knocker unit to clear the slide, so the coffee you put in is effectively the coffee you get out — which is what makes it viable for cupping, where cross-contamination between samples invalidates the result.
