Pre-infusion gently wets the coffee puck at low pressure before full extraction begins. This helps the puck saturate evenly, reducing channelling and often producing a sweeter, more balanced shot. On the Matrix it's adjustable, so you can tune the pre-infusion time to suit your beans and grind.
